Cost of ingredients in December 2020: Approximately R12.50 per person

  • 1 cup cooked brown rice
  • ½ tin chickpeas, drained
  • 1 ripe avocado, peeled, pitted and diced
  • 1 spring onion, chopped
  • A handful of green beans, chopped
  • A few red cabbage leaves, finely chopped

 

Dressing

  • A few glugs of extra virgin olive oil
  • A squeeze of lemon juice
  • Salt and pepper
  • Divide the ingredients between 2 bowls and drizzle the dressing ingredients over. Enjoy!
