- 1 cup cooked brown rice
- ½ tin chickpeas, drained
- 1 ripe avocado, peeled, pitted and diced
- 1 spring onion, chopped
- A handful of green beans, chopped
- A few red cabbage leaves, finely chopped
- A few glugs of extra virgin olive oil
- A squeeze of lemon juice
- Salt and pepper
- Divide the ingredients between 2 bowls and drizzle the dressing ingredients over. Enjoy!
